Voor het pasteuriseren van ijs wordt meestal een pasteurisatieproces van 70-80\u00b0C en 30 minuten gebruikt. De HLB-waarde van het emulgatormengsel moet rond de 9 liggen.<\/p><p>B. De uiteindelijke zuurgraad van de melkoplossing moet worden ingesteld op 60 \u00b0C, met oplosbare vaste stoffen op 8%.<\/p><p>C. Grondstoffen moeten volledig opgelost zijn.<\/p><p>D. Bij het aanpassen van de zuurgraad moet de temperatuur van de melkoplossing en de zuuroplossing rond de 20 \u00b0C zijn, waarbij de zuuroplossing continu binnen 1,5-2 minuten wordt toegevoegd.
